Caesar Salad Dressing with Roasted Garlic

A delicious, creamy dressing, packed full of flavour.

This tastes a thousand times better than anything you can buy in a bottle, and you can tweak it to your own tastes.


It's also incredibly easy to make, and if you're gluten free, there's an easy substitution you can make for one of the ingredients, plus if you don't like the flavour of anchovy, you can skip it.

It will keep in the fridge for a week, so get yourself some Cos lettuce (tip: soaking the leaves in ice cold water whilst you prepare other ingredients will crisp it right up), and any 'illegal' toppings you fancy adding to it - I like grilled chicken and crispy bacon, but shhhh, don't tell the purists!

Easy (Cheat's!) Black Bean Sauce

Easy, tasty black bean sauce recipe - save yourself an absolute fortune on those tiny packets of stir fry sauces you get from the supermarket!

No need to buy those over-priced sachets from the chiller cabinet every again - all you need to do is slice up two chillies and grate some ginger, add a few more ingredients and you've got yourself over a litre of sauce that you can freeze which will make around twenty portions or so!


Not only that, if you buy yourself a six pack of Lee Kum Kee black bean garlic sauce (see here for where I get mine, affiliate link which won't cost you any extra), that's twelve lots of the below recipe, which is...erm...  around 240 portions, and it currently costs £12.60 for a six pack. So, if you do the maths, supermarket sachets or jars cost around £1 for a two portion serving (so that would be £120 for 240 portions), so for the price of a few chillies and some ginger root, and a few store cupboard ingredients, you are genuinely saving over £100 overall by making your own - I've even shocked myself working that out!!!

Anyway, without further ado, here's the recipe - oh, and I tried to take a photo of just the black bean sauce, but it just looked like a pan of black stuff (!), so I've used one of my photos of beef in black bean sauce that I've taken previously. I hope you enjoy it!

Easy Satay Sauce

This is a delicious Thai version of satay sauce, that is ridiculously easy to make (and you can also freeze it) - try it, you won't be disappointed!

This is a scale-up of my original recipe, which also has a marinade for chicken skewers, and a recipe for pickled cucumber salad - the chicken and salad serve four as a main, or more as a starter - you can find the recipe here.

I found it beneficial to scale up, as then you use the entire tin of coconut milk, you don't have to stint on your portion of sauce if you're not limiting your calories, and it keeps really well in the freezer. And if you want to make your own Thai red curry paste, you can find my recipe here.

Wild Garlic Pesto

Make the most of seasonal fresh wild garlic by using it in a delicious pesto!

There's no cooking involved, it only takes a few minutes to make, and you can either store it in the fridge for a couple of weeks, or in the freezer for a few months or more.


What's more, you can forage it for yourself when it's in season for free if you're lucky enough to know where there is some - but remember to only take the leaves and not the bulbs, and only take as much as you need. If you can't find any for yourself, you can get it from certain shops when it's in season, or you might be lucky enough to have a friend who has it growing in their garden.

Easy Sweet and Sour Sauce

This is great for dipping things like spring rolls or prawn crackers in, or having alongside battered chicken or prawns etc.

Plus, when you make it yourself, you know it's not got artificial colouring in, and if you're gluten free, you can choose to use tamari sauce or gluten free soy sauce.

Added bonus - there's no chopping anything, you just need to plonk a pan on your scales, and weigh everything into it with a squidge of tomato puree!

Very Easy Garlic Yoghurt Sauce

Perfect for drizzling over kebabs!


This is so easy, it's barely even a recipe - however I feel it's an important component of a home made doner kebab, alongside a good chilli sauce (see here for my easy fresh chilli and tomato sauce recipe), so it needs to be here!


Only 4 ingredients, and 12 calories per 15ml tbsp (depending on which yoghurt you use).

This is such a simple, tasty, no-cook chilli sauce it's well worth making - and quicker than nipping to the shop to buy some!


I make this for drizzling over home made doner kebabs (see here for my recipe to make your own delicious doner kebab meat), but if you're a fan of spicy sauces then you could use it in lots of other ways!


As it's made from fresh ingredients it will only keep in the fridge for a few days, but it's easily halved, and you can freeze what you don't need for another time.

If you want to reduce the heat, you can either reduce the number of chillies you use, or omit the seeds.

Calories: approximately 7 calories per tbsp, 273 calories for the whole batch.

Better-Than Chip Shop Curry Sauce - naturally Gluten Free

Craving a really, REALLY good curry sauce to have with your chips?


Then, as the cliche goes - look no further! This is based on the flavours of one of the tastiest curry sauces I've had in recent years with fish and chips, at The Fish and The Chip in Leicester which does a fairly priced and very tasty plate of gluten free fish and chips at lunchtimes, should you be looking for anywhere coeliac-friendly!


Curry sauce is by nature, not the most photogenic of condiments, however what it lacks in aesthetic appeal, it certainly makes up for in flavour, and it's not at all complicated to make, and you've probably already got most of the ingredients to hand - so do give this a go! Plus, you can freeze it in portions for the next time you need some with your (fish and) chips! And of course, I've got a delicious and easy recipe for gluten free battered fish, that you can make in a frying pan!

Rich Madeira Sauce with Wild Mushrooms

Delicious with steak, this decadent sauce is a real treat which also complements chicken and pork.


Things like Madeira, cream and wild mushrooms are luxurious ingredients, coming together in a rich sauce perfect for when you indulge yourself in a really decent, aged steak from a good butcher, and want to adorn it with something which will complement it, and not overpower it.


I confess, I haven't taken the best photo as I was plating up for four (including two hungry children!) for a certain person's birthday without the time or opportunity to faff about with beautifying the plate as I often do, or take anything but the briefest of photos, but I hope you can at least imagine how delicious the sauce might taste - which it really, REALLY does - there was not a drop left on these plates afterwards!

Retro Chasseur Sauce

A rich tomato, white wine and tarragon sauce with sliced mushrooms in it.


This sauce may be a bit of a blast from the past, for those of us frequenting British Pubs and Restaurants a couple of decades ago! 


However, this version is made from natural and fresh ingredients, and packed full of flavour. This sauce goes equally well with steak, chicken or pork fillets/steaks (just substitute chicken boullion/stock), or fish (use vegetable or fish boullion/stock). 

Makes 4 servings at 120 calories each (if you're counting. If not, feel free to increase the oil if you need to.), freezes well. Slimming World 1.5 Syns per serving.

Rich Tomato Sauce - for Pizza or Pasta (includes Thermomix instructions)

A delicious tomato sauce with a real depth of flavour, perfect for pizza topping or pasta.


There are hundreds, probably thousands of recipes for tomato sauces out there. And it goes without saying that the most important thing about the sauce is the key ingredient - tomatoes. Most often, outside of Italy you'll be lucky to get really good, flavoursome fresh plum tomatoes (and honestly, if they're that good, I'd probably want to eat them raw!). However, most people can at least get hold of tinned plum tomatoes which are the next best alternative and offer a far more consistent and tasty result when making sauces than using fresh, which can often be watery and lacking in flavour if grown too quickly.


With tomato sauce, you either want to cook it really quickly if you're using good, fresh tomatoes; or a nice long cook for at least 40 minutes, as the acids don't come out of the tomatoes until about ten minutes of cooking - hence quick cooking to avoid them being released, or slowly cook them out to evaporate the acids. This sauce is the latter which means the garlic and onion cook down gently with the tomatoes, into a nice, pulpy sauce. You could, of course, sieve or puree it if you wished to, but I love the texture and flavour of it as it is. Don't forget to add an extra drizzle of extra virgin olive oil at the end, on your pizza or pasta, of course, and maybe a little fresh torn basil!



Makes around a litre / kilogram of sauce, which should be enough to top 10-12 decent sized pizzas, or coat a similar amount of portions of pasta, or serve as a sauce (you would need even less if serving as a sauce to accompany fish or poultry etc., about half a serving).

Calories: There are 860 calories in total for the batch. If your finished batch weighs 1kg after reducing, then it is 86 calories per 100g (a tenth / approximately one portion for pizza / pasta). For a lower calorie version, reduce the olive oil to 1 tbsp to fry the onion and garlic in, and omit the extra virgin olive oil at the end - this will reduce the total calories to 561 for the entire batch / 56 calories per 100g.

Lobster Mayonnaise (or Langoustine Mayonnaise)

A beautiful accompaniment to butter-poached lobster, langoustines, or prawns for a special occasion...

This will make a whole batch of mayonnaise, so not only can you enjoy it with lobster, you'll have plenty left over that you can enjoy in other ways - whether you mix in some juicy fresh prawns or crabmeat and top halved avocados, or have in a baguette, have as a topping for jacket potatoes, or even mix a spoonful into eggs for a tasty rich omelette...


It's no different to making 'normal' mayonnaise (which I think is actually quite easy), you just flavour the oil first - my recipe for lobster oil is here and just takes 20 minutes plus cooling down time.

My preference is to make mayonnaise in a bowl with a whisk by hand, as I've never had a fail that way, it only takes a few minutes and you can see that the egg yolks are emulsifying as you go - however I've included videos for making it with a normal food processor or a Thermomix.

Lobster Oil or Langoustine Oil - includes Thermomix instructions

A richly flavoured oil, perfect as the base for mayonnaise or dressings, or just to drizzle decadently over fancypants food...


Inspired by the idea of langoustine oil à la Tom Aikens from a distant memory of the Great British Menu, and wanting to make full use of the shells from the lobster tails I bought for a starter to a special meal, I decided to make a 'lobster mayonnaise' - with the lobster flavour coming from an oil infused with lobster shells and other classic flavours.



Now, what I should have done when making said lobster oil, is pour the finished article into a pretty bottle, hang a rustic tag around it, and write 'Lobster Oil' upon said tag, in some pretty handwriting. Maybe even go deep sea diving, and balance it against an old shipwreck / treasure chest, with lobsters prowling around it for an atmospheric photo... But this didn't even occur to me, as I was 'in the moment' and far too busy worrying about the mayonnaise I was going to make splitting... (yes, more about that in another blog!).

Cranberry Sauce with Port and Orange (includes Thermomix instructions)

Delicious served as a condiment with a roast turkey dinner, on the side of cold meats, or in a baguette with soft brie, and maybe even a little bacon, or with turkey, ham and stuffing!


Cranberry sauce isn't just for Christmas, so why not make more of this deliciously tart and tangy sauce! This luxury version is enhanced by the flavours of port, orange and a hint of star anise, and as well as the traditional foil for a rich turkey dinner, it is the perfect partner to rich and creamy French cheeses and cold meats.


This yields about 1.1 to 1.2 litres of sauce, and it will keep unopened in the fridge for many months (mine usually happily lasts up to a year, or more!) if sealed in sterilised jars, as well as keeping a good few weeks after being opened. Makes a lovely gift, too. Around 50 calories per tablespoon.

Creamy Peppercorn and Brandy Sauce - Thermomix Version

This is our absolute favourite sauce of all time to have with steak, so it was about time I wrote up my recipe for the Thermomix!


It's also good with pork steaks, or even chicken breasts, but for me, this is complete 'steak dinner' perfection served with chunky chips, grilled tomatoes and mushrooms, and peas (or petit pois in our case!) and of course, a perfect medium rare steak. Throw on some crispy onion rings if you're going to really push the boat out! If you haven't got a Thermomix or you really love setting fire to your sauces (seriously!), then worry not, my original recipe is here, and if you want instructions on how to cook the perfect steak sous vide in your Thermomix (however you like it cooked, and whether you have a TM31 or a TM5), you can find them here.


This makes enough sauce to serve four generously (it yields around 350ml so possibly six - I'm just incredibly greedy with this sauce because I love it so much!), and you can also freeze leftovers, which re-heat very successfully with a vigorous stir at the end. If you would like to cook your steak sous vide, you can put the sauce aside to keep warm while you cook your steak, or re-heat, and it will be quite happy. Lay some greaseproof paper over the top to stop a skin forming, or just give it a vigorous stir before serving.


Serves four, takes 20-25 minutes to cook, 164 calories per serving (but you're not seriously counting with this, are you??) ;)

Simple Chinese Dip Selection

Put this selection of Chinese dips together in literally just a few minutes! Great for spring rolls, dim sum, satay skewers, wontons and more...


There's no need to faff about with these, a minute's chopping, and a couple of minutes mixing together, and you're there!

          

A selection of quick and easy dips which will serve eight people (we had more than twice as much as we needed for four people eating spring rolls!) and can be put together in under 5 minutes! 167 calories in total for all of the dips, if you're counting, so about 21 calories per serving if you share nicely. Everyone loves the peanut dip, so you might want to make more! If you're a fan of sweet chilli sauce and want to add that into the mix too, my recipe is here.

Chunky Nicoise Dressing - includes Thermomix method

Full of Nicoise flavours, this chunky dressing goes amazingly well with seared tuna steaks, roast or barbecued lamb and you can skip the anchovies if you like to make it vegetarian, for a delicious dressing for a hearty, warm potato and egg salad.


This is what I love to top a good seared tuna steak with, on top of steamed French beans and potatoes, with a side of leaves and tomatoes in my take on Tuna Nicoise Salad (see here for recipe). Anchovies, garlic, olives and tomatoes are also great partners to lamb, and this is delicious spooned over freshly grilled or barbecued lamb rump or leg steaks (or even sliced roast lamb), served with roasted Mediterranean style vegetables and baked baby potatoes with olive oil, sea salt and garlic (just par-boil first for ten minutes or so, and stick in a dish in a hot oven for about half an hour).

        

Is your mouth watering yet? (Mine is!). You can easily double this, and it will also keep in the fridge for a few days. It's nice as a dip for warm crusty bread too, (oh how decadent!) and good warm or cold - although my preference is for warm or room temperature - not chilled.

This quantity serves four, at 142 calories per serving.

Perfectly Rich and Creamy Peppercorn Sauce for Steak

This is my perfect peppercorn sauce. I don't want to even admit how many years I've been making it, but I hope you like it too!

Out of all of the recipes I've ever posted or shared, this is probably the one I make the most. It's evolved over the years, and poured over juicy steak is the go-to pick-me-up treat of choice in this house. And there's no skimping allowed with this - a treat is a treat! Normally, I just cook it intuitively. I've done it so many times I don't weigh or measure anything, it's just all done by sight and taste and memory, because I make it the same way every time - but this time, I recorded it, and measured as I went so that I could share it. Part of me likes to think that when my kids have grown up and left home (hopefully not in the too near future!), this blog will be a little reminder of home, and some of the lovely food we've all shared together that they can recreate their favourites from (when they're not sneaking back for dinner!). I have to confess though, on the rare occasions we treat ourselves to steak, sometimes we hold out and wait until after they've gone to bed to have it (sorry kids!)... ;)

So, what to have this with? My personal recommendation is with your favourite cut of steak, cooked your favourite way (for me, that would be medium rare - we like to vacuum seal them, and put them in the water bath at 56.5C for an hour or more - more time makes no difference - oil lightly, season then just sear for a few seconds on each side on a searing hot griddle to get some 'barking' flavour), served with chunky chips or sautéed potatoes, and 'petit pois' peas (my preference over garden peas) with a grilled flat mushroom and grilled tomato. For complete overkill, add a few crispy onion rings in there, and you won't be able to manage pudding! Did I miss anything?

We like our sauce, we do - so this will give you a very generous amount. Probably enough for four people really - as you can see in the photo, you get a whole ramekin full to yourself (I'm a 'dipper', rather than a 'pourer'!). However, running out of sauce to go with your dinner is a heinous crime indeed - and you don't have to use it all up, it will freeze and re-heat gently, although you might want to give it a bit of a whisk when you re-heat it, to make sure it's smooth.

On this basis, I'm giving you a 'serves two'. Plus, I only have about 5 ounces of steak, and I know some people put away double that! Calories? Seriously? Oh OK then, call it 307 per serving with maximum cream. Well, I did say there was no skimping... [Calories in square brackets, spoilsports]

Sweet Chilli Sauce - includes Thermomix method

Who doesn't love dipping into a sweet chilli sauce?



And with only 5 ingredients, you can make your own quickly and easily in around ten minutes!


Delicious with Thai food, such as fishcakes, crabcakes or plump and juicy prawns, this quick recipe can be put together while whatever you are dipping in it is cooking!

Serves four, easily doubled. You could even make up a large batch if you wanted to, and store it in sterilised bottles as it would last a long time due to the ingredients. 60 calories per serving [calories in square brackets].

Skinny Béchamel Sauce

If you're counting calories, then this is a great substitution for full-fat béchamel sauce.


Although technically not a
béchamel, as it's not made from a roux base (flour and butter cooked together), it's unlikely most people would be able to tell from tasting it! Also, because it's thickened with cornflour, it's gluten free. 
 
You can also make this LACTOSE FREE by using lactose free whole milk, lactose free mature cheddar and either lactose free spread or butter if you can tolerate it.
 
This quantity will make enough for a lasagne or moussaka for six people. 306 calories for the full quantity, 51 calories per serving. [Calories in square brackets].
