Spicy Cornbread - Naturally Gluten Free

This is delicious served as a side dish to a good chilli con carne, or veggie chilli, especially fresh from the oven!


It's also very easy and quick to make - you just need to soak the toasted corn for a few hours or overnight / during the day first, then a quick mix and pop it into the oven for 15 to 20 minutes!



It's a lovely, tasty accompaniment to chilli, crusty on the outside and soft and moist on the inside - if you don't want it especially spicy you could just use half a red chilli and skip the jalepenos, or cut all the chilli out altogether if you prefer.

I haven't tried making this with any dairy free substitutes, as yet, as the reaction between the buttermilk and the bicarb is part if what makes it light and fluffy - so if any of my dairy-free or vegan friends or followers do make it with a dairy free substitute, I'd love to hear what you used and how you got on. Buttermilk essentially tastes like yoghurt, but is a bit thinner, and has a very low fat content - so if you can't get hold of it, then you could just use regular plain low fat yoghurt and thin it down a little with water.

Cuts into 8 or 12 wedges, serves 8 to 12 as a side to a main meal. 116 calories for a twelfth wedge, 173 calories for an eighth, if you're counting.

Cherry Bakewell Flapjack Bars - Gluten Free

Delicious, moist, flapjacks with the flavours of a cherry bakewell tart!


Since my daughter had to go on a gluten free diet, we've tried a fair few sweet and savoury snacks - some quite tasty, some... well... let's just say we didn't try them more than once!


If you're gluten free, you're probably aware of how horrendously expensive gluten free products are, with even just the basics often costing in excess of four times their gluten-y equivalent! So, it makes sense to make your own food from scratch, where you can, as it makes the cost a lot more manageable. Even when buying gluten free oats from the supermarket costs four times more than normal oats, you're still making a huge saving on baking your own treats with them - just imagine how much more it costs to buy the finished baked goods gluten free!

Anyway, I digress. There was a nice Bakewell-style slice that my children both liked, and so I came up with a home-made alternative - which I have made using predominantly oats, with plenty of almonds so it's more filling, and a bit healthier than just a cakey slice on top of pastry - plus who wants to make pastry, right?!

Makes 40 bars at 169 calories each (or cut these in half to make mini squares for lunchboxes / treats at 84 calories each, so they're under the 100 calorie mark!) - although if you want to cook fewer / use a smaller tin, you can easily halve this quantity, and just cook for about ten minutes or so less.

Smoked mackerel pâté

A delicious pâté which is also great to use as a dip for crudités.


This has to be one of the tastiest fish pâtés! It's great for entertaining as a simple, prepare-ahead starter served with some home-made melba toast (see tips), or for dipping sticks of cucumber, peppers, carrot etc. as a healthy, low-carb snack - see bottom of tips for suggestions with calories: you can have a lovely selection of vegetables for one for less than 60 calories! 


If you want to lower the fat content, you can use lighter cream cheese and substitute the creme fraiche for Greek yoghurt.


This amount will serve four people as a light starter, or two gannets! (It will basically over-fill two decent sized ramekins - and one is perfect to share!)

Calories per portion: for a quarter portion this is 206 calories for the full fat version, or 138 calories if you're using lightest cream cheese (e.g. Philadelphia lightest) and 0% Greek yoghurt.

Traditional English Pikelets - Gluten Free

If you're a fan of crumpets, then you will love pikelets - they're very similar in taste and texture, far less faffing about, and a bit bit lighter and less stodgy!


You can make a batch of these, then either keep warm or store them in a resealable bag or container in the fridge or freezer, and toast lightly as needed.


They are delicious with a smear of butter, and your topping of choice - some like jam, some like golden syrup or honey, and some go for savoury with melted cheese and a splash of Worcerstershire sauce - me? I like to rebel against convention and have a smear of cream cheese, some smoked salmon and freshly snipped chives on top, a bit like large blinis!


I developed this recipe because my daughter and I had tried all the gluten free crumpets we could find on the market, and frankly we didn't like any of them, so I had to come up with something myself! If you want to make crumpets rather than pikelets, you can use this recipe and use greased rings to cook them in, and cook for a bit longer on each side. I just prefer pikelets, and of course less faffing about!


This amount of batter will make 20 small-ish pikelets (the same diameter as your average crumpet), and you can fit three or four in a large frying pan at once, so not too much time spent at the stove, as they only take a few minutes to cook!

Approximately 51 calories per pikelet (if yield is 20).

Nutty Chocolate Bark

So simple, it's cheeky to call this a recipe - but helpful for those counting calories, or sticking to allowances to be able to weigh out portions.


As a self-confessed chocoholic, I can easily inhale what should last several days within the space of an evening, without even thinking about it!


If I'm trying to lose weight, chocolate tends to be my nemesis, so I have to find ways of making it last / stretch and pad it out with things that will make it more satisfying, and add a more healthy element, without compromising on deliciousness!

Calories: 150 calories per portion (26g), makes 12 portions.

Slimming World: makes 12 portions (weigh out at 26g each), where the nuts and seeds can be your healthy 'B' choice for the day, and the chocolate part is 3.5 syns. If not counting the nuts and seeds as your healthy 'B' choice, add on 4 syns per portion (so 7.5 syns in total).

Quick Chinese Chicken and Sweetcorn Soup

This tasty soup is so simple to make, it is quicker to rustle it up yourself than pop to your nearest takeaway and bring one back!


Plus when you make it yourself, you know what's in it - and I like to make my version a little more filling and flavourful than the versions I've had in some Chinese eateries, which can err on the side of insipid at times. It's also a great way to use up roast chicken leftovers (although you might need to adjust the calories, if you're counting!).


We had this for our Chinese New Year starter (followed by my favourite of beef in black bean sauce) - the added bonus of making it at home being that I knew it was safe for my daughter to eat as I could guarantee it was gluten free - which won't make a difference to most people, as it's mostly a case of just making sure you use gluten free soy sauce (or tamari) instead. And before anyone says anything, my apologies to anyone of Chinese descent for the authenticity of this soup... it's very popular in the UK!

Serves four people from 195 calories a portion. (A quarter portion weighs around 350g, so you could make them smaller to serve more, e.g. six portions of 235g and reduce the calories to 130 if you like!).

Easy Ham and Cannellini Bean Soup (Gluten and Dairy Free)

A tasty, healthy soup that you can throw together for a nutritious light meal


Well, this was going to be ham and lentil soup, until I realised that my dried red lentils weren't actually gluten free (my daughter can't eat gluten) and I had to think of a quick substitute as things were already cooking away and I didn't want to waste my precious ham stock from cooking the Christmas ham (Knorr stock cubes are good too if you don't happen to have your own ham stock lying around)!


Luckily there are always various tins of beans in the cupboard here, so I substituted some cannellini beans in part of the broth so she could eat it, and put the lentils in the remainder (next blog!) for the rest of the family. You don't have to use cannellini beans, you could use butter beans, haricot or any other mild and creamy tasting white bean. It turned out really tasty, so I thought I'd share the recipe!

Serves four to six, from 93 calories per serving for a smaller portion (six smaller portions at around 250g each, or four larger portions at around 400g each - exact weight depends on how much liquid has evaporated overall) or 139 calories for a larger portion.

Comforting Creamy Tomato Soup (Includes Thermomix and Instant Pot instructions)

A deliciously comforting tomato soup to take you back to your childhood...


There's nothing like a bowl of tasty tomato soup to comfort you on a cold day. It floods the house with delicious smells too, as it cooks. If you want to be really indulgent, you can't beat having a toasted cheese sandwich on the side!


I made this so my daughter could enjoy it too, as she is on a gluten free, lactose free diet (you could make it dairy free too, by using appropriate 'milk', e.g. rice, oat or nut milk, or and extra 500ml of stock - although we are avoiding oats for her as well - if you do this and cut out or substitute the honey, you can make it vegan too) - but if you're not restricted in your diet, there's nothing stopping you from adding a splash of cream at the end to make it ultra-indulgent!

If you'd rather avoid potatoes, you could substitute sweet potato or squash instead (although maybe don't add any kind of additional sweetener until after you've tasted it for seasoning). As we're a family of four, I do tend to cook in large quantities so we'll enjoy this two days on the trot then freeze the rest in portions - but you don't need to make this much if you don't want to - it's very easy to just make half the quantity.

Yields: approximately 4.5 to 5 litres; 16 servings (approximately two ladlefuls for a serving) - easily halved!
Calories: 101 calories per serving.

Marinated Mushrooms with Garlic, Lemon and Herbs, and other Summer Grilled / Marinated Vegetables

Delicious appetiser / antipasti, side dishes, or even starters. Makes for great vegetarian mezze / tapas dishes to share.


I really love mushrooms, and remember making Mushrooms a la Grecque many, many years ago. I thought I'd add my own spin to it, by charring the mushrooms a little first, as a nod to the char-grilled marinated artichokes we enjoy, and a few of my favourite flavours.


Scroll down for a couple of other recipes / suggestions for side dishes to go alongside the mushrooms (as pictured). 

These dishes will collectively serve 4-6 people as sides for lunch, and keep well in the fridge for a few days (see notes).

Calories per serving for those counting: Mushrooms - 70, Asparagus - 50, Peppers and Tomatoes - 61. Total calories for all three dishes as sides - 181.

If you're not counting calories, feel free to slug in extra oil and serve with Parmesan shavings, torn mozzarella, goats' cheese, feta cheese, pine nuts, and / or whatever else you fancy scattered on top or along side!

Chunky Minestrone Soup (includes Thermomix and Instant Pot Pressure Cooker instructions)

A delicious, hearty Italian soup originally made from leftovers and seasonal ingredients.


This is possibly my favourite soup - I just love the comforting flavours, and the feeling that because of the wonderful mixture of vegetables, tomatoes, legumes and pasta that you're eating something really good for you. If you can resist it, the flavours improve and it tastes even better the day after making! Omit the pancetta and use vegetable stock to make this into a fantastic vegetarian dish. Use rice or gluten free pasta to make it wheat / gluten free (I like to use gluten free spaghetti broken up into short lengths). Substitute any vegetables and beans you like (or have to hand!) to make it your own.


When I planned the ingredients to make this (I normally just throw everything in when making this kind of soup! But when I'm going to blog something, I plan it in advance) I wasn't really thinking in terms of volume, and ended up using two stockpots to fit everything in, so I have scaled it down to more reasonable proportions - however, feel free to halve the recipe below if needed, you won't really need to adjust the timings particularly. It depends on your appetites, and how much of a meal as to how many portions you end up with, and it freezes and defrosts really, really well. I just portion it out into small food bags which easily fit a 500g portion each, or more.

Makes 16 lunch-sized servings of approximately 250g at 106 calories per serving (I find 250g is quite filling) - or for a dinner-sized serving, double it to 500g for a pretty hearty and filling meal! Add grated parmesan on top for 39 calories per 10g (goes pretty far if you use a microplane grater).

For those counting calories, I've put them in square brackets next to each ingredient, along with the weights of the vegetables. If you're not counting, don't feel obliged to stick rigidly to the weights given below, they're just a guide.

Roasted Aubergine and Spinach Curry

A delicious vegetarian curry that's easy to make and tasty!


'Roasting' the aubergines until soft, and then scooping out the flesh means that you don't need to cook them in lots of oil, and that they take on a rich, toasty flavour from the slight char on the skin which permeates through to the flesh.


If made with two de-seeded large red chillies, this is a very mild curry, which makes a lovely vegetarian main on its own (you may want to add a tin of chickpeas to add more texture and protein to the curry, if you want to serve it as a main on its own), or a beautiful side dish to other curries, or part of a selection (e.g. a thali).

Makes seven portions (main sized) of approximately 250g, at 134 calories each; or eight servings if including chick peas (see 'variations'), at 157 calories a portion. Serves more as a side dish, and freezes well.

Retro Chasseur Sauce

A rich tomato, white wine and tarragon sauce with sliced mushrooms in it.


This sauce may be a bit of a blast from the past, for those of us frequenting British Pubs and Restaurants a couple of decades ago! 


However, this version is made from natural and fresh ingredients, and packed full of flavour. This sauce goes equally well with steak, chicken or pork fillets/steaks (just substitute chicken boullion/stock), or fish (use vegetable or fish boullion/stock). 

Makes 4 servings at 120 calories each (if you're counting. If not, feel free to increase the oil if you need to.), freezes well. Slimming World 1.5 Syns per serving.

Courgette and Aubergine Curry (Zucchini and Eggplant)

Delicious on its own, or as an accompaniment to other curries.


This is a simple but tasty curry, delicately spiced and lovely as a main, or an accompaniment to other curries. You can play around and substitute whatever vegetables you have available ( it’s very versatile – peppers, cauliflower, squash, okra, sliced carrots, green beans are all good – or you could make it with just aubergine, or a mixture of vegetables.



I usually like to serve this as part of a selection of Indian dishes to cater for all palates, but it is excellent as a low calorie vegetarian main dish.

Serves 4-8 depending on whether served as a main dish, or a side dish.

Calories per serving: 120 calories if served between four people as a main, 60 calories if served between eight as a side.

Moroccan Spiced Roast Vegetable and Lentil Soup

Warning: This soup will fill the house with gorgeous smells whilst cooking!


This delicious (and healthy!) soup came about for two reasons: Firstly, I wanted to create a vegetarian soup with Moroccan flavours which didn't contain chickpeas, and secondly, there's a jar of ras el hanout in my spice cupboard which was crying out to be used in something!


So here it is, I'm very pleased with it, and everyone else really loved it too! Feel free to shake up the flavours by substituting a different spice mix, or adding cooked pulses after blending it to make a heartier soup.

Yields 10 portions (recipe easily halved) of approximately 250g each, at only 99 calories per serving!

Black Sesame Spinach and Spiced Sesame Spinach Egg Rolls

It's a two-for-one! A different way to eat spinach with the delicious, nutty flavour of toasted sesame, and the option of using it as a filling for a spiced egg roll.


You can make the spinach as a side dish to complement Japanese main dishes, such as my teriyaki chicken or salmon, or kushiyaki beef skewers, or you can make it as a filling for delicious spiced egg rolls as below - almost like a seaweed-free, rice-free version of sushi rolls!


As a side dish, you can divide the spinach between two (or eat it all yourself!), or you can stuff one egg roll and have it as a snack just for you, or share if you're presenting more than one dish.


The black sesame spinach is 116 calories per serving (if serving two) and the sesame spinach egg roll is 345 calories in total for the whole roll. [Calories in square brackets]

Crab claws with Chilli, Ginger, Garlic and Spring Onion

Fantastic starter or snack, or great served with a selection of Chinese dishes to share. Simple ingredients but absolutely delicious!


If you love crab, and you've seen crab claws and wondered what to do with them, then here's a delicious and really easy way to cook them, Chinese style!


This was inspired by the way my favourite Cantonese restaurant serves king prawns - with the exception that they also add a splash of ignited brandy from a metal ladle, to flambe the prawns! Feel free to add this touch for extra visual impressiveness if you want to!

Serves two, easily doubled or halved. 120 calories per serving. [Calories in square brackets]

Jamaican Rice and Peas (includes Thermomix method)

The perfect accompaniment to dishes such as jerk chicken, curry goat, or even on the side of ackee and saltfish! (Can you see where I'm going here?)


OK, so this is one of those things that I usually don't really bother measuring or timing when I make it - in that I make a load, we eat what we need for that meal, and the rest goes into the fridge or freezer for convenience - it's very forgiving when being re-heated, or kept warm!


This quantity serves a good eight to ten (from 245 calories per generous portion) - but let's face it, if you're having a barbecue for friends and making a heap of jerk chicken, you'll be glad of it! And if not... just halve the quantities, or put what you don't want into the freezer for easy future accompaniments. To be honest, if you are entertaining, and you make this quantity and serve a range of dishes, it's probably going to serve a few more than ten people.

Quick Thai Prawn and Pineapple Skewers

OK, so you have some plump and juicy delicious raw prawns (shrimp), and you want something quick and tasty to do with them?


Well, dig out that red Thai curry paste, and a few chunks of pineapple (you can even use tinned!) and a luscious treat is yours in minutes!


These are delicious cooked on the BBQ (and probably rather impressive too... little do your guests know how easy they are!), or just cook them under the grill, or on a griddle instead. It really doesn't matter as they will be full of flavour either way!

You can use a good quality ready-made Thai red curry paste, if you can't get hold of all the ingredients to make one yourself, or if you want to make your own, my recipe is here (includes Thermomix instructions).


Serves two as main with sides, or four as a starter or as a selection of dishes. Makes four skewers,  62 calories per skewer (124 calories for a portion of two skewers). Easily doubled, or more, for everyone.

Easy Baked Eggs with Spinach, Tomatoes and Ham

Perfect for breakfast, brunch or even supper, choose whether to ramp them up with a splash of cream and a light grating of parmesan cheese for an indulgent treat, or stick to the virtuous version...


Not only is this a delicious and healthy dish, it also only take a couple of minutes to put together, and you can quickly wilt the spinach by pouring hot water from the kettle over it in a colander!



Use your favourite ham as a base (or if you're vegetarian, substitute some sliced, lightly pan-fried mushrooms), and pile the other ingredients on top. For a bit of a change, substitute a slice of Italian mortadella sausage for the base, or even a slice of smoked salmon for a luxury treat! Delicious served with a slice of your favourite crusty bread, toasted - or enjoy on its own for a low carb treat.

Serves: As few or as many as you like, provided you have enough dishes! I make this for my family of four, but I've put the ingredients down for a two person serving, so it's easy to double or halve them, for four people or one person.

Calories: 179 calories per person for the 'regular' version with a thick slice of ham (or as low as 146 calories if using a slice of generic supermarket ham) - and add another 90 for the cream and parmesan 'luxury' upgrade! See the notes below for different calorie counts of hams etc. if you're counting. Want more protein? Throw in another egg for around 88 calories.

Shrek Pie ! (Includes Thermomix instructions)

Or for the adults, Spinach, Mozzarella, Sun-dried Tomato and Olive Slice!


Although this is not just for kids, we all know that if it's green, it's 'unclean' as far as most of them are concerned, and in order to entice children to eat things which are green, we have to give them 'special' names relating to their favourite characters - be that Shrek, Hulk, Kermit or whoever else is flavour of the month! I think you can probably see why this one is "Shrek"...!

Shrek Pie

My son (who is 12) told me that whenever he finds this in his packed lunch at school, he pumps his fist in the air and shouts "Shrek Pieeeeee!" to his friends - I'm not really sure what to make of this, but apparently some of his friends have tried it and liked it too, and it's kind of funny!

I use buckwheat flour in this but there's no reason you can't use plain gluten free flour, or even just plain (or wholemeal) wheat flour if you're not cooking gluten / grain free.

I baked this specifically to be gluten free and lunchbox friendly - and it will make a good 20 portions at 80 calories each (in case you're tempted!) as a side / with other savoury things to eat (I cut 10 rectangles from each dish - but then cut some of these in half to fit into lunchboxes, two a portion). If you're making this for dinner, it's more likely to serve 6-8 people with sides.
