Masala Chai Cake with Vanilla Cinnamon Frosting (Gluten Free)

A deliciously spiced, moist and light cake that no-one will guess the secret ingredient to!

I am always trying to think up new and exciting flavours for cakes to make that everyone can enjoy, and I thought my idea for a masala chai cake was inspired!

As it is autumn, I thought something with warming spices would be delicious, which made me think of masala chai - an Indian take on tea, simmered with whole spices - namely cinnamon, cardamom, ginger, cloves and black peppercorns - with a cinnamon and vanilla cream cheese frosting to complement the flavours.

Spiced Snozzcumber Cake (gluten free and lacto/dairy free - or not!)

A seriously delicious and moist cake that no-one will guess the secret ingredient to!

OK, don't worry, you don't have to get hold of 'snozzcumbers' to make this - large courgettes or marrow will do the job! Why 'Snozzcumber Cake'? Well, it was World Book Day and I went to work dressed as the BFG (complete with big ears, cape, dream blower, a bottle of Frobscottle, and of course some 'snozzcumbers' - which were extremely large courgettes) and decided to make a cake from said snozzcumbers to take into work for the rest of the staff to enjoy.

If you like carrot cake, I think you'll love this, as I use similar spicing to that I use in my carrot cakes, but use pecan nuts instead of walnuts, and a maple flavoured cream cheese frosting to complement the flavours. As my daughter has to have a gluten free diet, it is gluten free - but you'd never know as it is so delicious and moist! If you're not on a gluten free diet, feel free to use normal plain flour instead. Either way it will be seriously delicious!

Makes a 9 inch square cake (so up to 16 portions depending on how you want to cut it!).

Courgette, Bacon and Cheddar Slice aka Zucchini Slice (Gluten Free)

A tasty, treat that's good hot or cold, as a dinner or a lunchbox snack.

Fairly quick and easy to prepare, you just need to mix all the ingredients together, pour into a tray and pop in the oven then go and put your feet up while it cooks! This is my low carb take on the Aussie favourite - 'Zucchini slice'.

Or, of course, you could make a nice big salad to go with it while it's cooking, and pop some jacket potatoes in the oven before you start - on a cold day, good with chips and baked beans too (especially for the kids!), or be more sophisticated with Jersey Royals and green beans.

It's so versatile, you can eat it hot or cold, and if you pop the leftovers into the fridge, it's perfect cut into squares for lunchboxes the next day, or as a snack when you get in from work and need something to eat NOW (or even freeze it in portions).

Serves four to six as a main. more as snacks / light lunches.

Calories: From 254 calories for a sixth, or 336 calories for a quarter portion, using fat free yoghurt. Using full fat yoghurt only makes 13 to 20 calories difference per serving.. For a smaller portion (lunch), it's 168 calories for an eighth.

Slimming World - Syn free for up to a quarter (if using the cheddar as a healthy extra, and 0% fat Greek yoghurt. Full fat Greek yoghurt for a creamier taste is 1.5 syns for a quarter).

Tofu, Mushrooms and Courgette in a Miso Broth with Noodles

So an April Fool's Day prank kind of backfired, and now we're aiming to eat vegan and vegetarian meals for the next month (as well as go sugar free!)...

Fortunately, I had a pack of firm tofu in the fridge on the day it happened (April 1st, of course...) so we were able to dive straight in with a tasty vegan dinner that everyone enjoyed! However, I am since discovering that planning and cooking meals for four people who all love their meat, fish and sugar is no easy feat - especially when you take out dairy and eggs for some of the meals too!

As it was so simple and tasty (and healthy!), I thought it would be nice to share it. It's based on the kind of thing I often throw together, but I wrote down the ingredients and quantities as I went for future reference (after all, we might be needing this meal again in the next month!). You can of course substitute any vegetables you fancy, just cook them to your tastes - you could even buy a pack of nice stir fry vegetables (you know, like the ones with tender stem broccoli and squash in) for total convenience!

Serves four, 185 calories per portion for the tofu and vegetable broth. Add 228 calories per serving for a nest of wholewheat noodles (making a total of 412 calories a portion) - or if you're on a fast day you could have zero / magic noodles for only a handful of calories, or make courgette noodles (and maybe substitute the sliced courgette for a different vegetable!).

Baked Cod Provencal

A delicious, healthy taste of the Meditteranean, cooked in just the one tray!

Yes, that's right. Not only does this taste amazing, you only need one tray to cook it in, so less pots to contend with, too!

Succulent fillets of cod cook perfectly in the oven, on top of a bed of delicious roasted vegetables full of Provencal flavours. Shavings of lemony fennel inspired by Gordon Ramsey, top it all off perfectly for a contrasting texture, with fresh herbs.

Serves two, 318 calories per serving.

Piccalilli with Pears and a Hint of Red Chilli (includes Thermomix method)

The perennial English mustard pickle favourite - punchy, crunchy piccalilli is perfect with pork pie, cheeses and cold meats all year around.

Having a kitchen helper or two will shave lots of preparation time from the recipe (whether they're smaller versions of yourself, or a clever appliance you can plug into the wall!), however it's all worth it for the amount of jars you'll end up with, which you can share around the family and friends (or hoard all for yourself if you're a complete piccalilli fiend!).

You'll end up with around three metric tonnes of piccalilli... no, just kidding, but you will need a pretty mahoosive pot to mix it all together with at the end: e.g. a 5 litre stock pot will do it - or use two large pans - or alternatively you can easily halve the quantities in this recipe. The whole recipe will make 4,800 to 4,900g piccalilli, so have plenty of jars ready to go - and it will easily last a year or more in sterilised jars.

How much it makes - smallest jars 326g
It's your choice whether to make this a chunky piccalilli to have as a side to cheddar, pork pie, ploughman's salad etc., or whether to cut it more finely, so you can have it as a sandwich pickle. I tend to cut mine on the finer side, so that it can be enjoyed as a side, and in lovely doorstep sandwiches. Makes a fabulous gift, and has a much more tasty and refined flavour than the bought jars of piccalilli which can be rather astringent from the vinegars used in them, or packed full of sugar.

Artichoke, Asparagus and Fennel Salad with a Lemon Dressing

This is a beautiful, Spanish-inspired dish, which really takes salad to a whole new level.

It makes great use of what some would consider luxury ingredients, and with the Spanish slant, goes wonderfully with things like grilled chicken, fish and seafood, or my Moorish-Spiced Pork and Padron Pepper kebabs, and makes a stunning dish on a table of food to share with friends.

Serves four as a side, 91 calories per portion.
Feel free to chop and change the ingredients according to what you’ve got! [Calories in square brackets]
