Black Sesame Spinach and Spiced Sesame Spinach Egg Rolls

It's a two-for-one! A different way to eat spinach with the delicious, nutty flavour of toasted sesame, and the option of using it as a filling for a spiced egg roll.

You can make the spinach as a side dish to complement Japanese main dishes, such as my teriyaki chicken or salmon, or kushiyaki beef skewers, or you can make it as a filling for delicious spiced egg rolls as below - almost like a seaweed-free, rice-free version of sushi rolls!

As a side dish, you can divide the spinach between two (or eat it all yourself!), or you can stuff one egg roll and have it as a snack just for you, or share if you're presenting more than one dish.

The black sesame spinach is 116 calories per serving (if serving two) and the sesame spinach egg roll is 345 calories in total for the whole roll. [Calories in square brackets]

Baked Feta in a Tomato and Oregano Sauce (with Thermomix instructions)

This is really simple, but incredibly delicious, and great to share!

Fantastic as part of a mezze to share with friends, served straight out of the oven when the feta is soft and spreadable and mingling with the chunky tomato sauce, with crusty warm bread to scoop it up - I can guarantee it will all disappear in minutes if not seconds!

Easy to make, and hard to go wrong - you can even prepare it the day before and just pop it in the oven when you're ready to go.

Serves four as an appetiser / snack with a 200g baton of crusty bread, or six with a couple of other dips and some crudites (vegetable batons, e.g. carrot, cucumber, peppers etc.). Easily doubled. From 145 calories for the baked feta in tomato sauce alone, or 279 calories per portion including bread (see below).

Pitta Crisps - a selection of flavours

A delicious, quick and healthy alternative crunchy snack, or tasty appetiser with dips before a Turkish or Greek meal.

Really simple and quick to make, these are just wholemeal (you could use white if you prefered) pitta breads, halved and cut into triangles with a selection of different toppings, toasted in the oven until crispy and light.

You could serve them with my Hummus (with tips for perfectionists!) and Tzatziki / Cacik along with some sticks of raw vegetables such as cucumber, carrots, peppers and celery for a really healthy, balanced snack or light lunch, or as part of a spread. They will keep in an airtight container for a day quite happily, although if you want them fresh and crispy, I wouldn't keep longer than this to serve to other people (although they will last quite happily a couple more days, just lose a little crispness).

Serving sizes are easy - served with raw vegetables, half a pitta bread will do per person (each half cuts into 6 crisps - half a wholemeal pitta from e.g. Sainsbury's would be 77 calories) for a snack; or use a whole one per person for something more substantial to eat, (154 calories), plus dips - see Notes below for more information. (Slimming World - SuperValu Round Wholemeal Pitta Breads 8 pack (1 x 48g) can be used as a healthy extra - therefore provided you choose a pitta bread without any added oil, a 48g portion before cooking could be used).
