Decidedly Delicious Blueberry Muffins - Gluten Free

These are indescribably delicious freshly-baked and warm from the oven!


In fact, I'd say they're impossible to resist eating warm and moist after the fragrance of them baking has filled the house!



Not only that, they're gluten free - but you'd never guess! Only one of us in the household has to be gluten free, but when a batch of these come out of the oven there's a mad scramble for them!

This recipe makes 12 muffins, and I would say it's a very easy recipe to make - you just need to mix wet and dry ingredients together and combine.

Ingredients

  • 200g blueberries - fresh, frozen or mixed - reserve 75g to top (I like to count out 36, so I can pop three on each muffin, because I'm sad like that!).

Dry mix
  • 225g gluten free flour (I use Juvela multipurpose white mix - I tried Doves Farm flour with the same quantities, but the blueberries sank, so you would need to use slightly more. Also Doves Farm has a grittier texture)
  • 125g golden caster sugar
  • 1 x 15ml tbsp ground cinnamon (or to taste, optional)
  • 1 tbsp GF baking powder
  • 1 tsp bicarbonate of soda
  • 1 pinch of salt (about 1/4 tsp)

Wet mix
  • 2 large eggs
  • 100ml oil (neutral tasting)
  • 1 tsp vanilla extract
  • 125g full fat Greek yoghurt
  • 25ml milk
Equipment
  • 12 hole muffin tin and paper muffin cases

Method

1. Heat oven to gas 6 and put muffin cases into muffin tray. 

2. Put dry ingredients into a large bowl and mix. Meanwhile mix all of the wet ingredients together in a separate bowl.

3. Make a well in the dry ingredients, pour in the wet ingredients, and stir together lightly (don't overmix), and stir in the 125g of blueberries lightly halfway through mixing. 

4. Divide between 12 large muffin cases (easiest using an ice cream scoop) and top with the remainder of blueberries. 

5. Put into the middle of the oven for 5 minutes then turn down to gas 4 for a further 18-25 mins, or until risen and cooked through. Let cool in tin for 10 minutes then remove to a wire tray to finish cooling. Don't worry if any of them fall into your mouth on the way to the wire rack, while they're still warm...
